Irish :)

Surprisingly the whole corn beef and cabbage is not one of the usual meals that the Irish eat. It is what they ate in the United States when many of them left Ireland due to the potato famine. Why we started this as the St. Patricks day meal I have no idea haha. But we still do it because it makes us feel our ancestors from this ravaged Island. I also believe that it is a tasty meal once a year and super good for you.

Serves 5

Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 10 small red potatoes
  • 5 carrots, peeled and cut into 3-inch pieces
  • 1 large head cabbage, cut into small wedges

Directions

  1. Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
  2. Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
  3. Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Asian Recipes

Mixing up recipes is a fun experience. I try new things put together different ways and eventually I find the perfect procedure to give the best outcomes. My favorite Asian dish is Kung Pao Chicken with Sesame Seed Broccolii, steamed white rice, and a delicious spring salad mix also with seseme seed dressing, candied nuts, and fried wanton strips. For this I used to make the broccoli and chicken separate with two different sauces, but I realized that sometimes one would be done first and then it would not be as warm as the other when I was ready to serve. Also when I would make this dish for my family, my little cousin didn't like the toasted sesame seeds on the broccoli, so he would not eat his veggies. After I changed the procedure a little bit by cooking the broccoli and chicken together with just the Kung Pao sauce, I would toast the sesame seeds and set them in a little bowl on the side so that everyone can choose how much they wanted on their plate. It came out all warm and ready to go at the same time, was still super delicious, and my entire family would eat all of it happily. It was delicious.

Mexican

I also love to make some easy, fast, and delicious Mexican foods. My favorite appetizer is the simple and easy salsa and chips. I have learned how to make it in my Culinary Arts class a few years ago and I am always very pleased with how it comes out. I have also found a few lovely videos on how to make it so you can see how it looks yourself. A tip I have is to make your own tortilla chips if capable so they are the size, shape, and thickness that you prefer. If unable to then just buy a bag of your favorite type at the store.


Some thing that every one should know is that any recipe you can make your own. It is a very simple thing that may change the recipe little by little to fit your likes. There is nothing wrong with making it how you like it. Something I would do to this recipe is to dice things such as the onions smaller because I enjoy it in smaller pieces to as to not overpower the rest. Now you try :)

My most favorite foods normally come from Italy. I am really big on pastas of all sorts, and even more so if they are nice and easy to make. Giada is a fantabulous cook and she always has some great ideas. One of her quick and easy recipes is 'Pasta alla Formiana'. This includes a 3 min video on how to make it with beautiful pictures.

Variety

It is always nice to have a variety of foods to make. Something I love to do is make dinner from a different culture once in a while. Some things I love to cook are Italian, Mexican, Asian, Irish, and a few more. Some of my favorites are the pastas, fajitas, stir fry, and delicious stews and soups.

Cupcakes

Last night I made 48 cupcakes with my loving 13 year old sister. Again this was from a yellow cake mix box for fast, easy, and delicious cupcakes. While I was away for a min or two she "accidental" dropped an entire container of green food coloring into BOTH batches. Therefore on valentine's day we have St. Patty's day cupcakes.... Well after baking them perfectly we added cream cheese icing and dinosaur sprinkles :)

Muffins!!!

The other day I made some muffins from a box :) don't be afraid to bake an already made mix. Sometimes they come out better than the scratch you can make or sometimes you will learn that you can make some all by yourself that are sooo much better than the box. The blueberry muffins turned iout really well with the crumble ontop but the apple cinnamin was a strange outcome.
